Overview
Join traditional food conservationist Max for guided immersive visits to learn the seasonal traditions of the mountain. From natural cheesemaking to chestnut smoking, there is something to be learned for everyone. Each trip begins in the Rustico tasting room tucked away in the pre-alpine backdrop of the Biellese, home to the acclaimed trips of Up There The Last, followed by an immersive adventure into the mountain to learn its deep traditions and enjoy a thematic lunch styled around the food being produced at any given time of year, from cheesemaking to chestnut smoking.
Meeting in the beautiful tasting room Rustico for a brief talk about the foods being researched at that given time of year, followed by a small adventure. Expect to visit cows being milked and natural cheese being made, chestnut harvesting and smoking, short hikes to charcuterie and obscure producers of hyper-local, often “illegal” foods, steeped in mountain tradition and heritage. Lunches are based around the tasting of these fundamental foods, led by Max.
